bbq jerk chicken and coconut jerk rice and beans

BBQ JERK CHICKEN AND COCONUT JERK RICE AND BEANS

Prep time: 20 minutes

Cooking time: 15-20 minutes Rice

Cooking time: 40 BBQ minutes Chicken

Serves: 4-6

INGREDIENTS

1 whole chicken

½ orange

2 cups basmati rice

1 can kidney beans

1tsp Marlaina’s Premium Traditional Jerk Salt and 1 tsp Marlaina’s Premium Jerk Seasoning Mild or Marlaina’s Premium Jerk Seasoning Hot

1 knob butter

PREPARATION

​Rice & Beans

  1. Rinse rice under the tap

  2. Boil water place rice, butter and Marlaina’s Premium Jerk Seasoning into it

  3. Add the tin of kidney beans including the liquid inside the can

  4. Bring to boil, stir once, simmer for 15 to 20 minutes until water is absorbed

  5. Let rest for 5 minutes, stirring one more time to make it fluffy

BBQ Jerk Chicken

  1. Rinse chicken with half an orange (brings a tropical flavour to it)

  2. Towel dry and rub or sprinkle Marlaina’s Premium Jerk Seasoning Mild or Hot all over it

  3. Place on a tray over the BBQ until golden brown and cooked through

SERVING TIPS

You can add coconut cream or milk to the rice to give it a truly aromatic flavour.
You may use your favourite rice of choice however basmati has an exceptional quality.
Can also be served with a fresh crispy green salad.
